Day and night pages
Ho-Oh on one side, Lugia on the other. Add Espeon and Umbreon in matching pockets and you've got the start of a day-and-night spread.
English set numbers shown below.

Missing the two illustration rares? Chandelure 075 and Hisuian Zorua 122 work here too, instead of 137 and 145.
A full-art page
For the sunny side
Alolan Exeggutor and Drifloon for a lazy-afternoon feel.
A glow after dark
Chandelure and Hisuian Zorua keep a little warmth in the night page.
Or give Hisuian Zorua the middle pocket and make a whole page around it:
Add a little Michi Art
For a bigger scene, split one artwork across two pockets. That leaves seven spots for cards.
Garden, top-left
Ho-Oh keeps the middle spot.
Moonlight, bottom-right
A little night scene opposite the garden.
Choose 2 across in Michi Art. Here's how to fit and print it.
Page count and setup
Two 9-pocket pages = 18 pockets. A page means one visible side. Check your physical binder's opening page so the pair actually faces each other.
For 12-pocket pages, add a row of three to each. Keep later extras on another page.
Start this binder creates empty pages. Choose 30th Celebration in the card library and add your picks by number. Save the cards you are missing.
Collect all 30 Pikachu, plan a larger collection, or remix a public binder.
